Origins of pizza
Pizza is reputed to have been invented in Italy and received its first burst of publicity, when the Neapolitan baker, Rafael Esposito, created a pizza in honour of the Queen of Italy’s visit to Naples in 1889. The Queen was Margherita, and the pizza named after her, the Margherita, comprising of the base, tomato sauce and mozzarella, is the most popular pizza of all time.
Essentially, pizza is a savoury dish of Italian origin, consisting, usually, of a round, flattened base of leavened wheat-based dough, topped with tomato sauce, cheese and a variety of other ingredients according to taste, baked at a high temperature, traditionally in a wood-fired oven. It is instructive to note that since its humble beginnings the variety of extra toppings that have made their way onto pizzas has exploded exponentially according to region and taste.
